>Saag Murg


Chicken is one of the most widely used ingredient in the world and generally suits most cuisines. Now this particular recipe has many variations but  this is the one I have seen ma making and it is the easiest and quickest. Plus I must admit that I am fond of anything that is green so naturally the tendency to combine chicken with spinach is always there but this one is pretty neat and you could do a quick whip up if you had to feed an extra mouth for dinner or simply enjoy a light quick meal.

I named it Saag Murg ( Spinach Chicken)

500 grams of Boneless Chicken diced
2 medium sized onions chopped
2 teaspoons of garlic paste
2 teaspoons of ginger paste
turmeric power (1 teaspoon)
Coriander Powder (I teaspoon)
Cayan pepper or red chilly powder 2 teaspoon 
4 cloves, 3 pods of Cardamom, 3 small pieces of  cinnamon (all crushed together in a mortar & pestle) 
Spinach 500gms (blanched in hot water and then to a paste in the processor)
tomatoes (3 medium sized diced)
Yogurt (6 table spoons)
Butter (3 teaspoons) Salted that is
oil 3 tablespoon
Salt to taste
Crushed chillies flakes (2 teaspoons)

Now in about 2 table spoon of oil fry the diced chicken till they are golden brown and then keep it aside. Add the remaining oil to which add the onions. Fry till they are light brown in colour and then add the ginger and garlic paste. Continue cooking for a minute or two and then add the crushed whole spices along with turmeric, cayan pepper and coriander powder. Fry all the spices till the oil begins to separate. Make sure you fry them in medium heat.  Then add the chopped tomatoes and salt  and continue cooking till you get a rich red colour and the tomatoes have mixed well with the spices. Add the fried chicken and cook for about 3-5 minutes. Then add the spinach paste and cook in low heat for about 15-20 mins. When the chicken has mixed well with the spinach, add the yogurt and mix well.Now here there s an option you can use cream instead, just that it tends to get rich and calorie count shoots up. finally, when it the yogurt has mixed well put a drop or 2  of butter. Then put it on a serving dish , garnish with chilly flakes, green chillies slitted and 3 to 4 teaspoons of butter.
