Its the rainy season and where ever you look its pouring..
You have had a long hard day at work and they you are like, damn I need to cook now… you are wet, tired and cold.. You can’t be bothered to drag yourself to the kitchen to cook that too for yourself no thank you!! That too when my fiance is away, normally if he is around there is always a reason to cook , and my folks are out of town so I even if I crash at their place, I still would have to cook…
This is a time when I desperately needed Prithwish, my fiance.. You know it is all rainy and you look out the window pane and you can hear the rain drops and that is when you crave for a bear hug, some one to hold you… sit by the window feeding each other… Ok yes, I know I miss him way too much.. He has been away all this summer.. some work thing.. But the good news is he will be home soon in a couple of weeks and honestly I can’t wait to see him…
So getting back to the whole dinner thing.. Right I had no way, I had to cook, it was pouring so heavily that even the take away refused to deliver.. Honestly, i needed some comfort food… something to cheer me up in this otherwise dull grey weather.. So I went looking and I had carrots, cucumber a whole host of chinese sauce and noodles.. so I got cracking and here is what I made..
Quick Sesame Noodles
5 ounces egg noodles
2 tablespoons oil
2 teaspoons minced garlic ( I just used garlic paste , could’t be bothered)
2 teaspoons grated ginger( ginger paste as well)
1/2 cucumber, peeled and thinly sliced
1 carrot, peeled and thinly sliced
1 teaspoons white sesame seeds
2 spring onions green parts only, thinly sliced ( if you have the patience) I just chopped it roughly was way too hungry
For the sauce I used
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons Chinese rice vinegar/ 9you could use normal vinegar but you won’t get the taste..
2 teaspoons chili paste ( use the ready made ones I use those hardly messy and no fingers burning….)
2 tablespoons sugar
½ teaspoon ground Sichuan pepper (optional) (I have a whole host of them at home)
Chilly oil to drizzle..
Bring a pot of water to boil and cook noodles .Drain immediately, rinse with cold water, and drain again. Toss with 1 tablespoon of the oil and set aside.Heat the other tablespoon of oil in a small pan over medium heat. Gently cook the garlic and ginger paste until just fragrant, about 30 to 40 seconds. Remove from the heat .
Prepare the sauce: In a medium bowl, combine the soy sauce, sesame oil, rice vinegar, chili paste, sugar, and optional Sichuan pepper. Add 3 tablespoons of water and combine the mixture till it is smooth. Stir in the cooked garlic and ginger.
Pour the sauce over the noodles, add the cucumber and the noodle. Sprinkle the sesame seeds and the spring onion greens. Oh you could drizzle some chilly oil.. Dinner is served… With a cup of freshly brewed green tea…
I curl up in front of the television, they are telecasting my favourite movie, Serendipity… Awwwww I miss Prithwish 😦 😦 but atleast I have noodles to cheer me up !!
