Tuesdays are vegetarian for us, period!! Now that coming from a bong, is well to say the least, surprising. The thing is the bong in me still does not understand why I have to be a vegetarian on a particular day and that is when the Delhite in me answers, you grew up in northern India, remember, Tuesday is Hanuman waar here ( day dedicated to the Monkey God Hanumana, faithful saarthi of Lord Ram) so no meat. Not that we are worshipers of Hanumana, but you know having grown up here, the local culture has its impact. When we first moved here, mum would often send our cook housekeeper to get meat on a Tuesday and his reply would be memsahib aaj murgi nahi kategi, aaj bakra halal nahi hoga kouno phayeda nahi. ( there is no way out , no one will butcher any meat today) as for fish, we were told we won’t get any fresh fish on Tuesdays and thus there began our vegetarian diet on Tuesday.
When I married into the De family, I saw that the same rules were followed though for a completely different reasons and Tuesdays continued to be vegetarian for me. Now that, I have moved to the UK and then on to US, I have tried to stick to the vegetarian diet on Tuesday, if not for anything it works as a good detox. P had been insisting on a cake for a while and on Tuesday he was like I want cake period!! Its Tuesday I said, remember, so no eggs, but he can be very persuasive, and all he said was cake cake cake!!! so I decided what the heck.. We will have cake , but eggless..
- All purpose flour-1 cup
- Cocoa powder-5 table spoons
- Caster Sugar- 1 cup
- I used vegetable oil- 1/2 cup
- Baking soda-1 teaspoon
- baking powder-1/2 teaspoon
- Yogurt-1/4 cup
- Milk-1/4 cup (room temperature)
- Vanilla extract- 1 teaspoon
- Almond flakes for decoration
- Icing sugar
Pre-heat the oven to 350 F. The procedure is actually very simple. You start with mixing all the dry ingredients together as in, the flour, cocoa powder, sugar, baking powder, baking soda and caster sugar.
Mix well and now add the other ingredients, oil, milk , yogurt and vanilla essence, use an electric beater, that way the mixing is much better that way.
Line a spring form cake pan with a parchment paper, pour the batter in to the pan, tap it a few times so that it spreads evenly. Sprinkle almond flakes on the top and bake for 30 mins and check with a toothpick in between and when it cokes out clean, the cake is ready.
Let it cook on a wire rack , once it is cool sprinkle icing sugar. cake is ready.. That too eggless and from now on cake on a Tuesday is a reality. :D.. Finally, I have a post ready for my friend’s give away 😀 at http://thoushaltcook.wordpress.com/
